Cafe Zoe: Chicken Salad

The chicken salad served at Cafe Zoe was originally served at its predecessor, the Empire Cafe. Whether ordered as a sandwich with homemade white bread or alone atop lettuce, it set the standard for chicken salad in the city.

Ingredients

  • Whole chicken breasts

  • Hellmann's Mayonnaise

  • While pepper

  • Sea salt

  • Chopped celery

  • Chopped parsley


Preparation

Boil bone in chicken breasts skin on. Cook until done.

While it's still piping hot (yes you will burn yourself) pull chicken off of the bones and discard skin. Chop into large chunks, at least one inch. Throw into a mixing bowl and add a ton of Hellmann's Mayonnaise, white pepper, sea salt, chopped celery and parsley. Mix while its hot! It soaks into the chicken that way.

We served it on bakery fresh white bread from a baker who is long gone. Bretcher's on South Grand. Garnish with butter lettuce.
