Nantucket Cove: Mayfair (Cove) Dressing

C. Gordon Heiss, president of the Mayfair-Lennox Corporation, developed this creamy anchovy based dressing at the Hotel Mayfair in the 1950s. When he opened Nantucket Cove in 1959, he brought the dressing with him, changing the name from Mayfair Dressing to Cove Dressing after he sold the Mayfair-Lennox Hotels in 1969.

Ingredients

  • 1/2 large onion

  • 1 stalk celery

  • 1 clove garlic

  • 2 two-oz cans flat anchovies

  • 3 whole eggs

  • 1/4 cup water

  • 2 Tbsp prepared mustard

  • 1 tsp cracked pepper

  • 1 cup corn oil

  • 1 cup extra virgin olive oil


Preparation

Put all of the ingredients in a blender and blend on high until the dressing is smooth.
