Mother-In-Law House: Pea Salad

The Mother-in-Law House’s pea salad originated with owner Donna Hafer’s "Aunt Cath" in Michigan and was on the menu at the restaurant for 37 years. It was one of a dozen salads in a complimentary salad bar available during dinner.

Pea Salad

Yield: 4 cups


Ingredients

  • 5 Tbsp mayonnaise

  • 5 tablespoons sour cream

  • 1/2 tsp white pepper

  • 5 Tbsp diced celery

  • 5 Tbsp salted Spanish peanuts, skins on

  • 1 lb frozen petite green peas, still frozen


Preparation

In a large bowl, stir together mayonnaise, sour cream and white pepper.

Stir in celery and peanuts, then frozen peas. Serve as soon as the peas have thawed or refrigerate until peas thaw.
