Miss Hulling's: Carrot Marshmallow Salad

Miss Hulling’s restaurants were much loved by St. Louisans. The cafeteria at 11th and Locust was a St. Louis institution for over 60 years, closing in October of 1993. Favorite dishes were the chicken livers, creamed spinach and carrot marshmallow salad.

Carrot Marshmallow Salad

Yield: 6 to 8 servings


Ingredients

  • 3 1/2 cups shredded carrots (1 lb carrots should make 3 1/2 cups.)

  • 1 cup tiny marshmallows

  • 1/4 cup pineapple (cut in 1/2 inch pieces)

  • 1 cup seedless raisins

  • 1/2 cup shredded cocoanut

  • 1 cup mayonnaise

  • 1 cup whipped cream


Preparation

Peel carrots. Shred with a coarse shredder into mixing bowl. Add marshmallows, pineapple, raisins, cocoanut. Toss lightly to mix. Combine mayonnaise with the carrot mixture. Carefully fold in whipped cream.

Serve in crisp lettuce cups. Garnish top with additional cocoanut if desired.

Helpful Hint: if the carrots are very moist, it may be necessary to reduce the amount of mayonnaise.

Salad freezes nicely. Eat frozen or thaw and serve as fresh.
