Goody Goody Diner's signature omelet was The Wilbur, an omelet filled with hash brown potatoes, green pepper, onion and tomato, and topped with chili and Cheddar cheese. The Wilbur was served with a bowl of creamy grits and a side of dollar pancakes.

Ingredients

  • 3 eggs, blended

  • 3 slices tomato

  • 2 oz chopped green pepper, sautéed

  • 2 oz chopped onion, sautéed

  • 1 oz shredded Cheddar cheese

  • 6 oz cooked hash brown potatoes

  • 6 oz cooked chili

  • Flavored liquid shortening


Preparation

Pour flavored shortening onto a 375-degree griddle. Slowly pour blended eggs into shortening. Allow eggs to cook almost completely. Add green peppers, onion, sliced tomato and hash brown potatoes on top of cooked eggs. Fold omelet into a roll. Place finished omelet on serving plate and cover with chili. Sprinkle Cheddar cheese on top. The Wilbur is served with a bowl of creamy grits and a side of dollar pancakes.
