Dohack's: Sweet Vinegar Coleslaw

Dohack's was famous for its fried chicken and its jack salmon. Dinners were served with potatoes, sweet vinegar coleslaw and homemade hillbilly bran muffins.

Sweet Vinegar Coleslaw

Ingredients

  • 1 medium head of cabbage, shredded

  • 1 large green pepper, sliced

  • 2 onions, sliced

  • 1 cup plus 2 tsp granulated sugar, divided

  • 1 cup white vinegar

  • 3/4 cup oil

  • 1 Tbsp salt

  • 1 tsp dry mustard

  • 1 tsp celery seed


Preparation

Alternate cabbage, green pepper and onion in layers in a large bowl.

Put 1 cup of sugar on top.

In a pan over medium heat, combine white vinegar, 2 teaspoons sugar, oil, salt, dry mustard and celery seed. Bring to a boil. Pour over cabbage mixture immediately. Do not stir.

Cover and refrigerate for 6 hours or more, then stir before serving.
