Brazie's served upscale Italian dishes, first in a dining room with a picture window facing Tilles Park and then on Watson, at Arsenal. Their Shrimp Gina Maria was a popular appetizer.

Ingredients

  • 5 oz fresh spinach

  • 1 tsp garlic, divided

  • 3 artichoke bottoms

  • 3 large shrimp

  • Extra virgin olive oil

  • Salt

  • Pepper

  • Red pepper flakes

  • White wine

  • Stock

  • Heavy whipping cream

  • Butter

  • Flour

  • Parsley, for garnish

  • Lemon, for garnish


Preparation

Saute spinach in olive oil. Add 1/2 teaspoon garlic and touch of salt and pepper.

Saute artichoke bottoms and shrimp in olive oil with 1/2 teaspoon garlic. Add touch of salt, pepper and red pepper flakes to taste.

Combine and saute with white wine, touch of stock and touch of heavy whipping cream. Thicken sauce with butter and flour.

Spinach goes on plate first, then artichoke bottoms with shrimp stuffed inside. Add lemon to plate for garnish with parsley.
