Bobo Noodle House: Asian Barbecue Spare Ribs

Chef Ny Vongsaly's Asian barbecue spare ribs had a remarkable depth of flavor, both in their meat and in an exotic mix of spices that caramelized on their surface. They were a mainstay on Zoe Robinson's Bobo Noodle House menu.

Asian Barbecue Spare Ribs

Yield: 6 to 8 servings


Ingredients

  • 1/2 cup sesame oil

  • 1 cup honey

  • 1 cup soy sauce

  • 1/2 cup Asian chili paste

  • 1 tsp garlic, chopped

  • 1 tsp fresh ginger, chopped in a food processor

  • 4-6 lb spare ribs, in racks

  • Salt and pepper


Preparation

Preheat oven to 325 degrees or preheat a grill to medium low.

To make sauce, whisk together sesame oil, honey, soy sauce, chili paste, garlic and ginger.

Season spare ribs with salt and pepper, and place on a cookie sheet in oven or directly on grill. Cook ribs for 45 to 50 minutes, turning them frequently until golden brown.

Baste ribs with sauce and cook for 10-15 minutes more.

Slice the racks into individual ribs and brush with remaining sauce.

Delicious hot, room temperature, or cold the next day.
